Pesto Chicken Sandwich | Original Team Recipe
– Serves 2 –
– Sandwich –
- French burger buns (inside toasted)
- Pesto mayo
- Green leaf lettuce
- Salted tomato
- Pulled chicken
- Bacon (Hormel Center Cut Bacon)
– Pesto Mayo –
- 1 tsp olive oil
- 7 tbsp hellmans light mayo
- 1/2 – 3/4 cup fresh basil (rinsed/dried)
- 1/2 tsp dijon mustard
- 2 tsp minced garlic
- 1/4 c pecans
- 1/2 c freshly grated parm
- Light sprinkle of cayenne pepper to taste
- Salt and pepper to taste
– Pulled Chicken –
- 1 chicken breast (filleted into 2-3 pieces)
- Salt and pepper
- Garlic powder
- Onion powder
- Paprika
Prep
1. Thinly slice tomatoes (lightly salt and pepper these about 20 minutes before and let rest on a paper towel. Press with a paper towel to get any excess liquids off before putting on your sandwich). Wash and thoroughly dry lettuce, cover and set aside.
2. In food processor, blend pesto mayo ingredients until the mayo is a very smooth consistency…
3. Cook bacon to your desired doneness. Drain on a paper towel and set aside.
4. Season both sides of the chicken, then throw them in a skillet with a little oil on medium heat until golden brown. Shred on a cutting board and return to the skillet, tossing for a few minutes.
5. Toast the buns face up in a broiler, then assemble the sandwiches. Enjoy!
